This is amazing
1 c. coconut milk
½ c. blueberries
1 tsp. sweetener (stevia or sweetener of your choice)
3 tbsp chia seeds
1 tbsp. coconut (shredded)
1 tsp. vanilla extract
In a bowl add the coconut milk, stevia, and vanilla extract and mix well. Add chia seeds and whisk well.
Add the mixture to a jar and place in the fridge for 3-4 hours.
When ready to eat top with blueberries, cinnamon, and shredded coconut.
